Those saddles are not designed to be ridden with any saddle to bar drop like that. The brooks looks nice but perhaps a a racing specific brooks instead of a touring model.

Its just that this saddle was ment to be on a touring bike where the bars are about same level as the seat and you have an upright position. If yo check out the Brooks Swift or swallow is meant for riding style for your position.

Well your saddle height should be high enough that the bottom of your pedal stroke your knees should have a slight bend to it and your foot flat without tippy toeing.
