My 3rd build, bought the full bike off gumtree for 450 and have just about completely redone it except for the frame, stem and seatpost.

Flip the stem if you can. Just did that on a Bonny stem I have on a Trek and it changed the position just enough. Of course,now the Bonny label is upside down lol.

Nice looking build. Seems you're headed in the right direction on components. I'd suggest changing your stem if you need that many spacers on it.
