Did you buy this from Firefly or is it 2nd hand? I think it's a nice touch to go with handbuilt wheels on a handbuilt bike. I also like the look of a Thomson cockpit on a traditional tubed frame. That said, I'm sure whatever you go with will look excellent.

As far as wheels go, I'm probably sticking with my handbuilt set until they fall apart. Not entirely sold on carbon clinchers yet.

Other components are going to be carbon where I can to save a little weight.
