If you mean running RX800 with the clutch disabled, zero issues even on super bumpy terrain. I find the clutch really only helps against chain slap and not for chain retention specifically.

I am using the 105 di2 on a different build and had the R7000 shifters from my old cx bike. Reuse + recycle.

The plan is to finish it by end of June (the frame is currently at my parent's house) I think. I have some 5-6 hour rides planned I think it will exceed on.

Any crazy ideas or parts you think I should try on it?

Your choice of parts looks good to me.
I personaly will put on a thinner saddleclamp and a darimo alloy stem just for looks but only if I decide to keep the bike.
Darimo IX2AL Stem in raw would look amazing on this build imo

looks great and the weight is very good. A friends made in italy cinelli nemo with full dura ace is over 10kg. The silver headset doesn't look lost like i imagined. It works well with the silver discs and the complete black rest of the build!
How does it ride?!
